Though I am not a big veggie eater, I find fresh grilled vegetables to have a wonderful taste. Here are four simple recipes for cooking peppers, onions, squash, zucchini and potatoes on the grill.

Ingredients

  • 1/4 cup chopped fresh cilantro
  • 3 Tablespoons lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon freshly gound pepper
  • 3/4 cup olive oil
  • 2 medium zucchini
  • 2 medium yellow squash
  • 1 medium red onion, sliced into quarters, then halved
  • 1/4 cup shredded parmesean cheese, use fresh, not packaged for best results

How to Cook Squash and Zucchini on the Grill

  1. Gather fresh cilantro, wash and dry it. Use herb knife to finely chop.
  2. In a small glass bowl, mix spices, olive oil and lemon juice.
  3. Chop red onion, zucchini and squash about one quarter inch thick.
  4. Place vegetables in a grill safe dish and brush with olive oil mixture.
  5. Place vegetables on grill at 350 degrees. Vegetables are done when they are tender with a fork, or about 25 minutes.
  6. Carefully use a grill mitt and remove this extremely hot pan from the grill. Place on a hot pad or transfer to a serving dish. Sprinkle with freshly grated parmesan cheese and serve.

Grilled Potatoes with Rosemary

These potatoes are delicious and so easy-to-make. It is the fresh rosemary that gives this dish such a unique flavor. Simply peel and dice potatoes. You can figure on a half a cup of potatoes per person. I like using white or red potatoes for this dish because the skins are thinner. In a small bowl, mix 3 Tablespoons chopped rosemary, 1/4 cup olive oil and 1 teaspoon kosher salt. Using a basting brush, brush the potatoes with the olive oil mixture making sure to coat all sides. Place in a grill pan on the grill for about 30 minutes at 350 degrees.

Use a Herb Knife to Cut Fresh Herbs

Sometimes having the right tools can make life so much easier. Using an Italian chopping knife, also known as a mezzaluna, to cut fresh herbs is far easier than a regular vegetable knife or paring knife. You just place your hands on both handles and rock the knife back and forth over the herbs until they are the desired size.

Summer Grilled Onions

Sweet Vidalia onions on the grill are a mouth watering treat for any summer meal. I have found the easiest way to prepare these is also the best tasting. First, spray one double sheet of foil with cooking spray. Chop onions into quarters and then separate. Place the onions on the foil. Dot with small dabs of butter on the onions and sprinkle with salt and a touch of pepper. Carefully place on the grill at 350 degrees and grill for about 30 minutes or until onions are tender.

Summer Fresh Red and Yellow Bell Peppers on the Grill

When bell peppers are grilled, a wonderful sweet flavor exudes from the vegetable. Since it has a naturally desirable flavor, I like to keep it simple and just brush with olive oil and sprinkle with salt and freshly ground black pepper. Chop the peppers, place in a grill pan and use a basting brush to coat them with the oil. Grill for about 30 minutes at 350 degrees. The vegetables are at optimal doneness when they are tender, but still slightly crisp.
